Poha upma (Aval upma)

Poha, made from flattened rice, can be used for making different breakfast or snack dishes. It is tasty in both the sweet as well as spicy versions.Poha upma can be  prepared very quickly. I have seen mostly poha-potato combinations in many dishes. But I havent tried it that way, I usually add the vegetables which is available readily. In this recipe, I have added only the green peas.

Ingredients:
Poha- 1 cup  (I used thick poha)
Onion - 1 small , finely chopped
Vegetables - 1/2 cup (I used only peas)
Ginger - 1/2" pc, finely chopped
Green chillies - 2 , finely chopped
Curry Leaves - 3-4
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Turmeric powder - 1/4 tsp
Coriander leaves for garnishing
Lime
Salt
Oil

Wash the poha ,squeeze out all the water and keep aside.
Heat the oil in a pan. Add mustard seeds followed by cumin seeds.
When they finish popping, add curry leaves,green chillies and ginger. Saute them for a minute.
Now add the onion, turmeric powder and saute until the onion becomes transparent. Add vegetables.
(I used frozen peas. I microwaved it for a few minutes,then added it to save the time of cooking)
When the vegetables are done, reduce the heat. Add the required salt and then the poha.Mix well.
If you feel the poha is drying up , just sprinkle some water.
Finally squeeze half of a lime to the upma.Garnish with coriander leaves.


Serves 2-3

Notes:
*You can add cashews or peanuts and roast it before adding the onions.
*You can garnish with sev or a little coconut.
